Black Tea with Thin Rice Cakes and All Natural Blueberry Fruit Spread
With the high cost of food these days…I’ve been trying to be a bit more frugal and was starting to feel guilty about maybe having to throw away over ripen bananas…so onto the internet to see what I can find….I had a box of Jiffy Oatmeal Mix in the closet and decided to use one of the bananas to enhance the flavor of the muffins…the others I peeled and stored in a freezer bag to freeze for another day of baking!
Stirred together an egg, milk, mashed banana and vanilla extract then blended it with the dry oatmeal ready mix.
couldn’t just have them plain so I made a crumb topping out of Light brown sugar, flour, cinnamon and butter
equal portions in cup cake tin adding the crumb topping and in 15 minutes I have a wonderful treat with my Tuesday Tea!
Banana Oatmeal Muffins
1 pkg of ready mix Oatmeal Muffin Mix
1/3 cup milk
1 mashed banana…. 1/2 cup
1 teaspoon of vanilla
Preheat oven to 400 degrees
Grease muffin pan or use paper baking cups.
mix egg, milk , banana and vanilla together and blend with dry ingredients of the Muffin mix. Fill muffin cups 1/2 full and sprinkle the crumb mix over top…Bake 13-15 minutes or until golden brown.
Crumb topping Mix
1/2 cup of Brown Sugar…..I only had Light Brown Sugar so that is what I used.
2 tablespoons of flour
1/4 teaspoon cinnamon
1 tablespoon of soften butter
Mix all ingredients together well and sprinkle on top of muffin mix before baking.
Ginger is a spicy rhizome which is consumed as delicacy, spice or for medicinal purposes. The root contains compounds that work similarly to some anti-inflammatory medications. Ginger also acts as a blood-thinning medication and can also lower cholesterol. Make sure you ask your doctor if it’s safe to eat ginger if you are on any medications for heart disease.
Steep a few slices of the root in hot water a few days a week to make a tea or shred it with a rasp to be used in a stir fry. Hence the photo opt of my Tuesday Tea……
My latest Summer reading…..I’ve been battling pain from crushed nerves, arthritis and degeneration in my disks, besides other monthly female discomforts….I’m in pain and over the counter anti-inflammatory drugs, I find I’m taking more and more of them. So afraid of what they will do to my other organs and then besides having pain, I’ll then have a breakdown of my organs….so I’m battling back with a diet that is rich in fiber, vegetables, legumes and avoiding animal products, dairy and fatty foods….now I know this will be hard but I’m giving it a try….everything in moderation to begin with, so as not to shock my system!
White tea with home baked butter cookies from my friend and co-worker Rosie…..she is a wonderful woman to have in our lives! 91 years young…she is still working full-time in our accounting department, she loves to bake, cook and spend time with all of her family!
